Emulsifiers and surfactants are compounds that reduce the surface tension of a liquid or the interfacial tension between two liquids (or between a liquid and a solid). There is a very wide variety of surfactants (anionic, cationic, non-ionic and amphoteric), which can be used for multiple functions: detergents, wetting agents, foaming agents, dispersants, anti-mist additives, anticorrosion additives, stabilizers, and more.
